CROCKPOT CHICKEN TORTILLA SOUP | EASY & DELICIOUS!

Fall is here ……and its time for some yummy & warm soup!  Try out this super-easy and delicous recipe for Crockpot Chicken Tortilla Soup!  It is the perfect recipe for a warm and hearty soup!

This recipe will easily yield 8-servings….ENJOY!!!!

CROCKPOT CHICKEN TORTILLA SOUP

8 Servings

Ingredients:

  • 1  1/2 lbs chicken breasts
  • 5 cups chicken broth
  • 16 oz. jar salsa
  • (1) 15 oz can of black beans rinsed & drained
  • (1) 15 oz can of whole kernal corn drained

Dry Ingredients:

  • 1 teaspoon  ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • ¼ teaspoon garlic powder
  • 1/8 teapsoon cayenne pepper
  • The juice from (1) lemon or lime
 Instructions:
  1. First place the chicken breasts on the bottom of your crockpot.
  2. Pour the salsa and chicken broth into the crockpot and make sure to move around the chicken breasts in the liquid.
  3. In a small bowl, combine cumin, chili powder, paprika, salt, pepper, garlic powder and cayenne pepper. Toss to combine.
  4. Add your seasonings, corn, beans, and lemon/lime juice to the crockpot. Give it a good stir, cover & cook for 6-8 hours on low or 4-6 hours on high.
  5. For the last 30 minutes of cooking, shred the chicken & then continue cooking for the last 30 minutes.
  6. Serve chicken tortilla soup with cilantro, cheese. green onions or any topping you would like!
  7. ENJOY!!!!

Aldi Budget Meal Recipe: Chili Lime Salmon

This Chili Lime salmon recipe is so delicious and affordable for your budget!  The key is in the seasoning…..it makes the Salmon perfectly moist and delicious!

Get together all the ingredients below and give it a try!

 

Ingredients:

Servings:  4

 

4 Salmon Fillets ( I use wild caught salmon…Sea Queen brand)

Juice from 2 limes

1- green bell pepper

1-red bell pepper

1-yellow bell pepper

1-orange bell pepper

1- small onion – cut into wedges

2 tablespoons of olive oil

2 tablespoons of water

1 tablespoon minced garlic

1/2 – 1 tablespoon red pepper flakes (depending on how spicy you want it)

1 teaspoon Cumin

salt & pepper to taste

**2 cups cooked Instant Brown Rice (Fit and Active brand) optional

** top with Mango Bean Salsa or salsa of your choice

 

Cooking Directions:

  1.  Preheat the oven on high to broil.  Grab a cooking tray and spray with cooking oil.
  2. Whisk together the following ingredients:  lime juice, olive oil, water, minced garlic, red pepper flakes, cumin, salt.
  3. Arrange the salmon fillets on the cooking sheet….pepper them for taste.  In a single layer, arrange the vegetables around the salmon.  Pour the marinade over the salmon & vegetables….use it all!
  4. Optional:  Prepare 4 cups of cooked brown rice.
  5. Broil until the salmon starts to brown on the top and edges (about 10-12 minutes)
  6. Take salmon out and de-skin before serving.  If vegetables aren’t as soft as you would like them, return them in the oven for additional cooking.
  7. Plate & serve!

ALDI BUDGET RECIPE | TOMATO SPINACH PASTA!

 

This recipe is perfect for the entire family.  It is so simple to make too!  I got all my ingredients for amazing prices at Aldi!

Below are all the details for this recipe….. be sure to give it a try for your next meal:

 

TOMATO SPINACH PASTA

Ingredients:

1/2 Bag Spinach (I used the Little Salad Bar bag from Aldi)

2 cups uncooked Pasta

1 small onion

1 can Diced Tomatoes

1 – 1 1/2 cups of favorite Pasta Sauce

 

1 tbsp Olive Oil

1 tsp Minced Garlic

Small pinch of Red Pepper Flakes

1/2 tsp dried Oregano or Italian Seasoning

Salt & Pepper to taste

Top with Grated Parmesan Cheese

 

**  This recipe will make 4 Full Servings and when served with homemade garlic bread….will cost under $5.00 to make!

  1.  Bring a pot of water to a boil and cook your pasta for 7-10 minutes.
  2. While your pasta is cooking, dice your small onion.  Add olive oil, diced onion and garlic in a pan and heat on low for 5 minutes.
  3. Add in the following ingredients to the onion & garlic mixture:  diced tomatoes (do not drain), Oregano or Italian Seasoning, Pinch of Red Pepper Flakes, pasta sauce, salt & pepper.
  4. Stir for 3-5 minutes on low heat.
  5. Add in the spinach and cook for 5 minutes (spinach will wilt down in size)
  6. After spinach has cooked, add in the cooked pasta and cook for an additional 3-5 minutes.  Be sure to stir all the ingredients together!
  7. Let pasta cool before serving.  Top with grated parmesan cheese.

 

HOMEMADE GARLIC BREAD

4 tbsp of butter

1/2 tsp minced garlic

  1. Heat oven to 350 degrees
  2. Heat butter and minced garlic in small sauce pan.  Pour mixture on top of Baguette an place in oven for 5-7 minutes.

DIY 3-Ingredient Peanut Butter Banana Dog Treats Recipe

Looking for a yummy dog treat recipe for your fur babies???  Tired of paying for high-cost dog treats?  I came across this simple and inexpensive Peanut Butter Banana Dog Treat Recipe thanks to munchkinsandmilitary.com!  I tested out this recipe to see if it was easy——as YES IT WAS!  The best part is that you only need 3-ingredients:  uncooked Oats, 1-Large Banana & peanut butter!  I purchased all of my ingredients at Aldi and paid less than $5….but I’ll be able to makes several batches!

PEANUT BUTTER BANANA DOG TREATS RECIPE

Ingredients
    1. 1 1/2 cups uncooked Oatmeal
    2. 1 large Banana
    3. 1/2 cup Peanut Butter
Instructions
  1. Preheat your oven to 350 degrees.
  2. Using a food processor or blender, grind your oats until they’re powder.
  3. In a bowl, beat together the banana and peanut butter until smooth. A few small chunks of banana here and there is ok. The dough should stick together, but shouldn’t be sticky.
  4. Reserve about a tablespoon of ground oatmeal and pour the rest into the banana peanut butter mixture and mix until combined.
  5. Dust your surface with the reserved ground oatmeal and roll your dough to about a 1/4 inch thickness.
  6. Cut into desired shapes and place on a parchment paper lined cookie sheet.
  7. Bake treats for approximately 15 minutes, or until the edges start to brown.
  8. Cool completely before storing in an airtight container for up to a week.

What did we have for dinner last night?????  Crockpot Chicken Fajitas!!!!  This recipe is so simple, cheap and delicious that I know you will add it to your future meal plans!!!!  Here is step by step what you need to make it!!!!

Servings for this recipe:  Chicken will yield at least 12 stuffed tortillas!!!!

Crockpot Chicken Fajitas ——–The Ingredients

1lb Chicken Breasts

Package of Tri-Color Peppers

1 Onion

1 Package of McCormick Taco Seasoning (I use the low sodium)

Directions:

1.  Wash & dice your peppers & onion.  Place them at the bottom of your crockpot.GetAttachment2.  Add your chicken on top of the peppers & onion.

GetAttachment3.  Pour entire packet of Taco Seasoning on top. (You do not need to add any water.)

4.  Cook on LOW for 6-8 hours (mine was done in about 7 hours.)

5.  Shred chicken in your crockpot.

6.  Serve with warmed tortillas, rice and beans!  Super-simple and it tastes awesome!!!!GetAttachment

Meal Costs:

1lb Chicken:  $3.79 (Aldi)

Tri-Colored Peppers:  $1.98 (Aldi)

Onion:  .82 (Jewel)

Flour Tortillas:  $1.45 (Aldi)

Beans and Rice:  .16 each (w/coupons at Target!!!)

Total was only $8.36 for this meal!!!  Plenty of leftovers too!!!!

Make these delicious Pumpkin Spice Muffins for less than $2.50!!!!!

Here is one of the easiest & cheapest quick snacks that you can make!!!

Pumpkin Spice Muffins  (makes about 18 muffins)

The Ingredients:

1 box of Betty Crocker Spiced Cake Mix

1 Can Libbys Pumpkin mix

(Total cost—-Around $2.50)

1.  Mix cake mix and entire can of Libby’s Pumpkin mix in a bowl.

2.  Fill cupcake holders about 3/4 full with mixture.  (It will make about 18 muffins).

3.  Bake on 350 degrees for about 20-25 minutes….I always do the toothpick check!!!  Let them cool for 15-20 minutes & that’s it!!!  Simple, cheap and super-delicious!!!!  I freeze half of the muffins in a freezer bag for a future snack!!!

My Meal Plan & Recipes for the Next 2 Weeks!!!!

Here are the meals & recipes that my family of 4 will be enjoying over the next 2 weeks!  Click this link to watch my video on this meal plan:

Italian Sausage & Peppers

Ingredients:

2 lbs Mild Italian Sausage

4 -5 cups of cut potatoes  (I like to use more vegetables than meat!)

2 cups of peppers ( I use Red & Green)

Italian Seasoning

Rosemary seasoning

Olive Oil

1.  Clean and cut up all your vegetables.  Place the cut up vegetables in a pan drizzled with some olive oil.  Add a few tablespoons of Olive Oil and your seasonings to your vegetables.  Put them in the oven at 350 degrees.

2.  After your vegetables have been in the oven for about 30 minutes, cut your Italian Sausage in about 1 inch portions.  In a pan on the stovetop, add some olive oil and start to cook the sausage.  I usually cook them for about 10 minutes (they will not be fully cooked—-I put them in the oven with the vegetables for the remainder of the time.)

After they have cooked on the stovetop for a few minutes, put the sausage in the oven with your vegetables and continue to cook for 45 minutes to 1 hour.  Make sure your meat is cooked and your potatoes are tender.

Crock Pot BBQ Pulled-Pork

Ingredients:

3 lbs Boneless Pork Roast

1 bottle of your favorite BBQ Sauce

1.  Place Boneless Pork Roast in the crock pot and set heat on low.  Add your BBQ Sauce over the roast.  Cook on low for 8hrs.

2.  Be sure to turn over the Roast a few times while it is cooking.

3.  After the 8 hours, take a fork to shred your pork.

Chili

Ingredients:

2 1/2 lbs Ground Beef

(2) 14 oz cans of Diced Tomatoes

(2) 15.5 oz cans of Chili Beans

1 or 2 8oz cans of Tomato Sauce…I usually just use 1.

1 package of your favorite Taco Seasoning

1.  Cooked and brown you ground beef.  Drain.

2.  Place the drained meat in a pot along with all the other ingredients.  Cook covered on a low heat for about 10 minutes.

3.  Serve chili over a baked potato!
